Chocolate Chip Pumpkin Muffins

Ingredients:

  • 1/2 tsp Ginger
  • 1 cup Pumpkin, canned
  • 2 Eggs
  • 1/4 tsp Baking powder
  • 1 tsp Baking soda
  • 1 1/4 cup Chocolate chips
  • 1 tsp Cinnamon
  • 1/4 tsp Cloves, ground
  • 1 3/4 cups Flour
  • 1/2 tsp Nutmeg
  • 1/4 tsp Salt
  • 1 1/3 cups SugarDairy
  • 1/2 cup Butter, unsalted
  • 1/2 cup water

Bake in a muffin tin at 350 for 20 min. Top with brown 
sugar or coconut shreds

Super Easy 
Pumpkin Soup

Ingredients:

  • 2 cloves garlic
  • 2 tsp ground cumin
  • 2 onions
  • 2 cans pure pumpkin
  • 3 cups chicken or vegetable stock
  • dash of salt/pepper
  • 1 cup milk
  • 1 tbsp olive oil

Saute’ onion and garlic in olive oil over medium high heat. Add cumin, salt and pepper. Add pumpkin, chicken stock and milk. Stir and bring to a boil. Simmer covered for 20 minutes. Garnish with sour cream.

Pumpkin Pie Smoothie

Ingredients:

  • 1 Banana, large
  • 1/2 cup Pumpkin puree
  • 1 tsp Agave nectar
  • 1 pinch Nutmeg and whipped cream
  • 1/2 tsp Pumpkin pie spice
  • 3 tbsp Milk
  • 6 oz Vanilla yogurt
  • 6 Ice cubes

Mix all ingredients in a blender except for nutmeg and whipped cream.  Blend until smooth, top with whipped cream and enjoy!
